The One Thing I Bake

I’m not a “foodie”.  I don’t spend hours slaving over a hot stove.  I don’t spend whole weekends compiling a month of different crock-pot meals in freezer bags, although I think it a wonderful idea and efficiency at its finest.  I made my children’s birthday cakes from a box until they decided ‘cookie cakes’ are the way forward and Publix makes a perfectly good one.

There is, however, one thing I do bake.  It is my ‘go-to’ for a home-made gift, cake-walk contribution or whenever the bananas in the fruit bowl get too yellow.  It is a wonderful recipe that I found over 10 years ago in a recipe book created for a dog rescue fundraiser and I share it here.

Banana Bread

Cream well:

1/3 cup butter and 2/3 cup sugar.

Add:

  • 2 eggs
  • 2 fully ripe bananas
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla

Beat until fluffy.  Add 1 3/4 cups of flour.  Mix at medium speed for 2 minutes.

Stir in 1 1/2 cups walnuts or pecans (nuts are optional).*

Bake in oiled loaf pans for 50-60 minutes or until done at 350 degrees F.

Makes 1 large loaf.

* I also like to use cranberries, especially for a Christmas gift.
