The One Thing I Take – Salad Recipe
I am not a “foodie” as I said in the article The One Thing I Bake – but this salad recipe is definitely the one thing I take whenever I need to take anything to a party, fiesta, bbq or book club!
My friends do not rely on me to bring “fancy” to a gathering. I don’t even have to talk myself out of attempting Butternut Gnocchi with Roasted Shallot Sauce, Pan-seared Seabass with Tomato-Saffron Broth, or Seared Apples with Brandy-Vanilla Syrup.
The one thing I always take though is a salad. Always the same salad and always a hit !
The tastes all work so well together, the impression is sublime – but it’s very simple.
1 Apple.
Chopped in half baby tomatoes – most of a small container.
Half a medium sized onion, chopped.
Half (or upwards of a half depending on the size salad) of a 4oz container of organic lettuce mix.
Cranberries.
Sugar roasted walnuts (you can do it yourself by soaking walnuts in brown sugar, a little water and a pinch of paprika and roasting them in a warm oven until crispy).
Most of a 40z container of crumbled Blue cheese.
Toss them all together and just before serving dress liberally with Olive Oil and Balsamic Vinegar.
